Spicy Lemon Mint Vinaigrette

Start to Finish: 10 minutes
Yield: Serves 8
1 tablespoon per serving

1/4 cup lemon juice
1 teaspoon agave syrup
1/4 teaspoon ginger, chopped
1 tablespoon mint, chopped
1/2 teaspoon jalapeno or Serrano chile, chopped fine
1/4 cup canola oil
1 tablespoon sesame oil
Salt and pepper to taste

Combine all ingredients. Whisk well.

Culinary Note: Add more or less chile depending on your desired heat level. Leaving the seeds and core in the chile will give you more spice and the full flavor of the chile; however, if you want a less spicy vinaigrette, leave the seeds and core out.
